William Fevre Chablis Vaudesir 2000
Tasting Note
'The Louis Michel Vaudesir, being raised entirely in stainless steel, is quite a bit less open to inspection than the Fevre Vaudesir, which is raised in a high percentage of older oak barrels. Fevre winemaker Didier Séguier is quite fond of one year-old barrels, so that may account for just the faint touch of vanillin to be found on the nose of the ’00 Vaudesir. The nose offers up a refined and polished mélange of green apple, sweet grapefruit, lime zest, fresh-cut grass, pulverized stone and the aforementioned hint of vanilla. On the palate the wine is fullish, deep and racy, with a fine girdle of acidity, a rock solid core of fruit, and great length and focus on the snappy, aristocratic finish. Interestingly, this wine closed very briskly once it was opened, and was quite firm and unyielding after about ten minutes in the glass. This is a superb young grand cru.'
